Method
- 01
Preheat your oven to 375°F.
- 02
Line a 12-cup muffin tin with paper liners or lightly grease each cup with cooking spray.
- 03
In a large bowl, whisk together your all-purpose flour, baking soda, salt, cinnamon, nutmeg, and cardamom.
- 04
In another bowl, whisk together the melted butter with both granulated and brown sugar until combined.
- 05
Add your eggs to the butter-sugar mixture and whisk until smooth.
- 06
Stir in your mashed bananas, sour cream, and vanilla extract until evenly combined.
- 07
Pour the wet ingredients into the dry ingredients and fold together with a spatula until just combined; do not overmix. Some lumps are okay.
- 08
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- 09
In a small bowl, combine the melted butter, brown sugar, flour, and cinnamon for the crumb topping.
- 10
Sprinkle the crumb topping evenly over each muffin.
- 11
Bake for 20–22 minutes, until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs.
- 12
Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
