If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

In a small saucepan, combine your soy sauce, mirin, sake, minced garlic, and minced ginger. Bring to a simmer over medium heat and cook for 2-3 minutes until slightly thickened. Set your tare sauce aside.

Preheat your grill to medium-high heat (about 400°F).

Thread your chicken cubes onto skewers, leaving a small space between each piece for even cooking.

Place the skewers on the hot grill and cook for 3-4 minutes on the first side until lightly charred.

Flip the skewers and cook for another 2-3 minutes on the second side.

Brush your tare sauce generously over the chicken skewers, coating all sides. Grill for another 1-2 minutes, turning to caramelize the glaze without burning.

Transfer your skewers to a serving plate and garnish with sliced scallions and a sprinkle of sesame seeds. Serve immediately while hot.
