Pat your beef cube steaks dry with paper towels. In a shallow bowl, whisk together your flour, black pepper, salt, paprika, and garlic powder.

In another shallow bowl, whisk your eggs with your milk until combined. Coat each steak in the egg mixture, then dredge in the flour mixture, shaking off excess.

Heat your vegetable oil in a large cast iron skillet over medium-high heat until shimmering, about 2 minutes.

Carefully place your breaded steaks in the hot oil. Sear for 4-5 minutes per side until golden brown and crispy. Transfer to a plate.

In the same skillet, add your minced garlic and sliced onion. Sauté for 2 minutes until fragrant and softened.

Pour in your beef broth and fish sauce, stirring to combine. Return the steaks to the skillet and simmer for 8-10 minutes, allowing flavors to meld and sauce to reduce slightly.

Squeeze your lime juice over the dish. Taste and adjust seasoning with additional salt, pepper, or fish sauce as needed.

Serve over rice noodles if desired, garnished with fresh cilantro and mint. Spoon the aromatic broth and caramelized onions over the top.
